Maple Dijon chicken breasts served with tender roasted sweet potato cubes

Once fall arrives, I start leaning toward dinners with warmer flavors, but I still want something practical enough to make during the week. Maple Dijon Chicken and Sweet Potatoes brings those two things together in one simple sheet-pan meal. The maple adds just enough sweetness, while Dijon mustard, garlic, thyme, and smoked paprika keep the glaze savory and balanced.

I chose chicken breasts for this recipe because they are lean, easy to find, and something my family already enjoys. The sweet potatoes roast on the same pan and absorb some of the maple Dijon flavor as everything cooks. With one pan and a short ingredient list, dinner feels seasonal without creating a sink full of dishes.

This is a nice change when I want something different from my easy sweet and sour chicken but still need a dependable chicken dinner that works on a busy night.

Why You’ll Love This Maple Dijon Chicken

  • Everything cooks on one sheet pan, so cleanup stays manageable.
  • Chicken breasts make it a leaner dinner while still providing plenty of protein.
  • The maple Dijon glaze delivers sweet, tangy, smoky, and savory flavor without a long list of ingredients.
  • Roasting the sweet potatoes first allows them to become tender without overcooking the chicken.
  • The recipe is easy enough for a weeknight but looks colorful and inviting on the table.

Tips for Juicy Chicken Breasts

Chicken breasts can dry out when they vary too much in thickness or remain in the oven longer than necessary. A few simple steps help them cook evenly and stay juicy.

  • Choose small chicken breasts that are close to the same size whenever possible.
  • Pound each breast to an even ¾-inch thickness so the thin ends do not cook long before the center.
  • Give the sweet potatoes a 15-minute head start before adding the chicken to the pan.
  • Divide the glaze before brushing the raw chicken, keeping a clean portion available for the final coating.
  • Check the thickest part of each breast with a meat thermometer instead of relying only on cooking time. The USDA safe minimum temperature chart recommends cooking all poultry, including chicken breasts, to 165°F.
  • Let the chicken rest for five minutes before slicing so the juices have time to settle back into the meat.

What to Serve With Maple Dijon Chicken and Sweet Potatoes

Because the chicken and sweet potatoes already cook together, this meal does not need much added to it. Steamed green beans, roasted broccoli, asparagus, or a simple green salad will add freshness without competing with the maple Dijon glaze.

For a more substantial meal, cranberry orange orzo salad with toasted walnuts adds seasonal color and a bright citrus flavor. Dinner rolls are another easy option, especially when there is extra glaze left on the plate.

If I am planning a full fall meal, I like the idea of serving a lighter dinner and finishing it with a slice of moist pumpkin bread with warm fall spices. The flavors work together without putting pumpkin into every part of the meal.

Easy Recipe Variations

  • Add red onion wedges to the sweet potatoes for extra savory flavor and color.
  • Replace some or all of the sweet potatoes with cubed butternut squash.
  • Add a pinch of red pepper flakes or cayenne pepper to give the glaze a gentle kick.
  • Use hot honey in place of 1 tbsp of the maple syrup for a sweet and spicy version.
  • Substitute boneless, skinless chicken thighs and adjust the cooking time as needed.
  • Add chopped pecans during the final five minutes for a toasted crunch.
  • Sprinkle fresh rosemary or thyme over the finished dish for a stronger herb flavor.

Ingredients

  • 4 small boneless skinless chicken breasts, about 5–6 oz each
  • 1 ½ lbs sweet potatoes peeled and cut into ¾-inch cubes
  • 2 tbsp olive oil divided
  • 3 tbsp pure maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 tsp minced garlic
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • 1 tsp salt divided
  • ½ tsp black pepper divided
  • Chopped fresh parsley for garnish optional

Instructions

  • Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper or lightly coat it with cooking spray.
  • Toss the sweet potatoes with 1 tbsp olive oil, ½ tsp salt, and ¼ tsp black pepper. Spread them in a single layer on the prepared baking sheet.
  • Roast the sweet potatoes for 15 minutes.
  • While the sweet potatoes roast, place the chicken breasts between two sheets of plastic wrap and gently pound them to an even ¾-inch thickness.
  • Whisk together the maple syrup, Dijon mustard, apple cider vinegar, garlic, smoked paprika, dried thyme, and remaining 1 tbsp olive oil. Transfer approximately 2 tbsp of the glaze to a separate clean bowl and reserve it.
  • Season the chicken with the remaining ½ tsp salt and ¼ tsp black pepper.
  • Remove the baking sheet from the oven and stir the sweet potatoes. Arrange the chicken breasts on the pan and brush them generously with the glaze from the first bowl.
  • Return the pan to the oven and roast for 15 minutes.
  • Brush the chicken with the reserved clean glaze. Continue roasting for 5–8 minutes, or until the chicken reaches an internal temperature of 165°F and the sweet potatoes are tender.
  • Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley if desired.

Storing and Reheating Leftovers

Store leftover chicken and sweet potatoes in an airtight container in the refrigerator. The FoodSafety.gov cold storage chart recommends using cooked meat or poultry within three to four days.

For the best texture, reheat the chicken and sweet potatoes in a covered baking dish at 325°F until warmed through. Adding a small spoonful of water or chicken broth before covering the dish helps prevent the chicken from drying out. Individual portions can also be reheated in the microwave at reduced power in short intervals.

The leftovers work well for lunch, especially when the chicken is sliced and served with the sweet potatoes over greens or rice. Keeping the chicken breasts whole until reheating also helps them retain more moisture.
