Ingredients
  

  • 4 small boneless skinless chicken breasts, about 5–6 oz each
  • 1 ½ lbs sweet potatoes peeled and cut into ¾-inch cubes
  • 2 tbsp olive oil divided
  • 3 tbsp pure maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 tsp minced garlic
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • 1 tsp salt divided
  • ½ tsp black pepper divided
  • Chopped fresh parsley for garnish optional

Instructions
 

  • Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper or lightly coat it with cooking spray.
  • Toss the sweet potatoes with 1 tbsp olive oil, ½ tsp salt, and ¼ tsp black pepper. Spread them in a single layer on the prepared baking sheet.
  • Roast the sweet potatoes for 15 minutes.
  • While the sweet potatoes roast, place the chicken breasts between two sheets of plastic wrap and gently pound them to an even ¾-inch thickness.
  • Whisk together the maple syrup, Dijon mustard, apple cider vinegar, garlic, smoked paprika, dried thyme, and remaining 1 tbsp olive oil. Transfer approximately 2 tbsp of the glaze to a separate clean bowl and reserve it.
  • Season the chicken with the remaining ½ tsp salt and ¼ tsp black pepper.
  • Remove the baking sheet from the oven and stir the sweet potatoes. Arrange the chicken breasts on the pan and brush them generously with the glaze from the first bowl.
  • Return the pan to the oven and roast for 15 minutes.
  • Brush the chicken with the reserved clean glaze. Continue roasting for 5–8 minutes, or until the chicken reaches an internal temperature of 165°F and the sweet potatoes are tender.
  • Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley if desired.
