Egg, Bacon, and Cream Cheese Biscuit Cups

Every Christmas morning, I delight in making egg, bacon, and cream cheese biscuit cups for my family, a tradition that has turned our festive gathering into a cherished culinary experience. The combination of crispy bacon, creamy filling, and buttery biscuit creates an irresistible treat that everyone eagerly anticipates.

How to Make the Biscuit Cups

To prepare these delightful cups, I start by heating the oven to 375°F and spraying eight regular-size muffin cups with cooking spray. In a bowl, I beat an 8 oz package of softened cream cheese until smooth, then gradually blend in 2 tablespoons of milk and 2 eggs until the mixture reaches a creamy consistency. I stir in ½ cup of shredded Swiss cheese along with 2 tablespoons of chopped green onions, which add a fresh, vibrant flavor.

Next, I separate a can of Pillsbury Golden Layers refrigerated biscuits into eight pieces, rolling each to form a 5-inch round that perfectly lines the muffin cups with a quarter-inch rim. I then sprinkle half of a package of bacon pieces on the bottom of each biscuit-lined cup before generously spooning in the creamy cheese mixture. After baking these delectable cups for 21 to 26 minutes, until the filling is set and the edges are golden brown, I finish them off by adding the remaining bacon pieces on top, and gently pressing them into the filling.

  • 1 pkg bacon pieces
  • 1 package cream cheese 8 oz softened
  • 2 tbsp milk
  • 2 eggs
  • ½ cup shredded Swiss cheese 2 oz
  • 2 tbsp green onions chopped (2 medium)
  • 1 can Pillsbury Golden Layers refrigerated biscuits

Instructions
 

  • Heat oven to 375°F.
  • Spray 8 regular-size muffin cups with cooking spray.
  • In a small bowl, beat cream cheese until smooth.
  • Gradually add milk and eggs, beating at low speed until smooth
  • Stir in Swiss cheese and onions. Set aside.
  • Separate the dough into 8 biscuits.
  • Press or roll each to form a 5-inch round. Place 1 biscuit round in each muffin cup; firmly press in bottom and up sides, forming a 1/4-inch rim.
  • Place half of the bacon pieces in the bottom of dough-lined muffin cups.
  • Spoon the cheese mixture evenly into cups.
  • Bake for 21 to 26 minutes or until the filling is set and the edges of the biscuit cups are golden brown.
  • Sprinkle each with remaining bacon; lightly press into the filling.
  • Remove biscuit cups from pan.
