Casseroles are one of my favorite dishes to make. They are easy and require little effort on my part. That is what I call a meal, it is the next best thing to someone cooking for me. This yummy Cheesy Taco Tater Tot Casserole recipe only takes 5 minutes to prep and then the hard work is left in the oven. It is even full of great spices and vegetables. A great way to get your kids to eat their vegetables and enjoy a tater tot casserole.
Start by preheating your oven to 425°F and spraying an 8×8 inch glass dish with cooking spray. Layer 14 oz of frozen tater tots, chopped red, green, and yellow peppers, red onion, and diced tomato in the dish, then sprinkle with 1 tbsp of taco seasoning and mix it all together for the perfect tater tot casserole. Bake for 22-26 minutes until crispy, stirring halfway through, then top it with 1 cup of shredded Mexican cheese and bake for an additional 4-5 minutes until melted.
Cheesy Taco Tater Tot Casserole
Ingredients
- Cooking Spray
- 14 oz frozen tater tots
- ¼ c. red pepper chopped
- ¼ c. green pepper chopped
- ¼ c. yellow pepper chopped
- ¼ c. red onion chopped
- ¼ c. diced tomato
- 1 tbsp. taco seasoning mix
- 1 cup shredded Mexican blend cheese
Instructions
- Preheat oven to 425°F.
- Spray 8×8 in. glass dish with cooking spray.
- Arrange tater tots, red peppers, green peppers, yellow peppers, red onion, and tomato in the dish.
- Sprinkle taco seasoning evenly and mix together.
- Bake for 22-26 minutes or until potatoes are crispy, gently stirring halfway through.
- Take the dish out of the oven and sprinkle evenly with cheese.
- Bake for an additional 4-5 minutes or until cheese is melted.
