Sometimes I make it with black beans because they do not require the extra step of cooking and are quick and easy. Other times, I’ll use leftover ground chicken or taco meat if I already have some cooked. Either way, it keeps me full for hours thanks to all the protein.

Once blended with cheddar, salsa, taco seasoning, and jalapeños, you really don’t get that typical cottage cheese texture people worry about. Instead, it becomes creamy, cheesy, and satisfying while packing way more protein than traditional queso.

- 1 cup full-fat cottage cheese
- ½ cup sharp cheddar cheese
- 2-3 tbsp salsa
- Taco seasoning to taste
- 1 tbsp jalapeños
- 1 can black beans OR 1 cup cooked ground beef or chicken
Instructions
- Add the cottage cheese, cheddar cheese, salsa, taco seasoning, and jalapeños to a blender or food processor.
- Blend until smooth and creamy. I personally use my Nutribullet which works perfectly for this recipe.
- Once blended, stir in your black beans or cooked meat.
- Microwave for 1–2 minutes, stopping occasionally to stir and test the temperature until warmed through.
