Yes so much of the country is talking about freezing temperatures and inches of snow. I know that it is winter pretty much everywhere. It is even pretty cold in northern Florida. However here in South Florida we have been spared the wacky winter weather of 2013-2014. Don’t get me wrong we have had a night or two when it drops to the 30’s but within a day it is back up in the 70’s.
Due to our wonderful climate Florida is often abundant in Fresh produce. In fact, January has many seasonal produce Fresh from Florida such as: avocados, broccoli, cabbage, carrots, cauliflower, celery, corn, cucumbers, eggplant, grapefruit, mushrooms, okra, onions, oranges, potatoes, radishes, squash, strawberries, and tomatoes.
So has a resident of Florida it is only fair that I take advantage of this fresh produce. The other day my husband and I picked up some subs from Publix for dinner. I decided while we were there to pick up some fresh ingredients and make one of my favorite spread/dips Avocado Salsamole!
Avocado Salsamole Recipe
Ingredients
- 1/4 cup finely chopped red onion
- 1 tsp minced jalapeno, or more to taste
- 1 Tbsp lime juice
- 1 Tbsp cider vinegar
- 1 tsp minced garlic
- 1/4 tsp salt
- 1 ripe avocado, peeled, pitted, and coarsely mashed
Directions
Combine onion, jalapeno, lime juice, vinegar, garlic, and salt in bowl. Add avocado stir well. Reserve avocado pit to add to mixture to prevent browning when refrigerated.
This is so easy to make and has a nice kick to it. You can make it more or less spicy with the amount of jalapeno you choose to use. It is great to spread on a sandwhich or even as a dip!
