Thick slices of brioche are dipped in a creamy pumpkin-spice custard and cooked until golden brown. This easy pumpkin French toast brings warm fall flavor to breakfast without becoming heavy or soggy.

- 8 thick slices brioche or challah bread
- 3 large eggs
- ½ cup pumpkin purée
- ¾ cup whole milk
- 2 tbsp packed brown sugar
- 1 tsp vanilla extract
- 1½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground ginger
- ⅛ tsp ground cloves
- ¼ tsp salt
- 2 tbsp butter divided
- Warm maple syrup for serving
- Powdered sugar for serving
- Chopped pecans optional
Whisk the eggs, pumpkin purée, milk, brown sugar, vanilla, cinnamon, nutmeg, ginger, cloves, and salt in a shallow bowl until smooth and completely combined.
Preheat a large skillet or griddle over medium-low heat. Melt enough butter to lightly coat the cooking surface.
Dip one slice of bread into the pumpkin mixture, coating both sides. Allow the excess custard to drip back into the bowl. Avoid soaking the bread for too long.
Place the coated bread on the heated skillet. Repeat with additional slices without overcrowding the pan.
Cook for 3 to 4 minutes per side, or until the French toast is golden brown and cooked through the center.
Add more butter to the skillet as needed and continue cooking the remaining slices.
Serve warm with maple syrup, powdered sugar, and chopped pecans, if desired.
