Crispy Lasagna Noodles
- 6 lasagna noodles
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp Italian seasoning
- ¼ tsp salt
- ⅛ tsp black pepper
Nacho Toppings
- 1 cup cooked Italian sausage crumbled
- ⅔ cup prepared Alfredo sauce warmed
- 1 cup shredded mozzarella cheese
- ¼ cup freshly grated Parmesan cheese
- ½ cup diced Roma tomatoes
- 2 tbsp chopped fresh basil or Italian parsley
For Serving
- 1 cup marinara sauce warmed
Preheat the oven to 425°F. Line two large baking sheets with parchment paper.
Cook the lasagna noodles in salted water until just al dente, approximately 2 minutes less than the package directions. The noodles should be flexible but not overly soft.
Drain the noodles and arrange them in a single layer on clean kitchen towels or paper towels. Pat them thoroughly dry and allow them to cool for approximately 10 minutes.
Cut each noodle into approximately 2-inch pieces. Place the pieces in a large bowl and gently toss them with the olive oil, garlic powder, Italian seasoning, salt, and black pepper.
Arrange the noodle pieces in a single layer on the prepared baking sheets without overlapping.
Bake for 8 to 10 minutes. Flip the pieces and continue baking for another 5 to 7 minutes, or until the edges are golden and the noodles are crisp. Watch them closely during the final few minutes because thinner pieces may crisp more quickly.
Transfer the crispy noodle pieces to one parchment-lined baking sheet, arranging them close together in a nacho-style layer.
Drizzle the warmed Alfredo sauce lightly over the noodles. Add the cooked Italian sausage, mozzarella, Parmesan, and diced tomatoes.
Place the pan under the broiler for 2 to 3 minutes, or until the cheese is melted and lightly golden.
Sprinkle with fresh basil or parsley. Serve immediately with warm marinara sauce for dipping.
- Drying the cooked noodles thoroughly helps them become crisp instead of chewy.
- Add the Alfredo sauce lightly so the noodles retain their crunch.
- Mild, sweet, or hot Italian sausage can be used.
- The noodle pieces may crisp at slightly different rates. Remove any finished pieces early if necessary.
- These are best served immediately after the cheese has melted.
