- 2 cups plain Greek yogurt
- 1 scoop vanilla protein powder optional
- 1 tablespoon honey or maple syrup optional
- 1 teaspoon vanilla extract
- 1 cup diced strawberries
- 1 cup blueberries
- ½ cup granola
- Optional: whipped topping shredded coconut, or mini white chocolate chips for topping
Add the Greek yogurt, protein powder, honey, and vanilla extract to a mixing bowl.
Stir until smooth and creamy. If the yogurt mixture is too thick, add a small splash of milk and stir again.
Dice the strawberries and rinse the blueberries.
Add a layer of strawberries to the bottom of each clear glass or jar.
Spoon a layer of the yogurt mixture over the strawberries.
Add a layer of blueberries.
Add another layer of yogurt.
Top with granola and a few extra berries.
Serve immediately, or refrigerate without the granola until ready to serve.
- Add granola right before serving so it stays crunchy.
- Vanilla Greek yogurt can be used if you prefer a sweeter parfait.
- For a thicker texture, use full-fat Greek yogurt.
- For a lighter version, use nonfat Greek yogurt and skip the extra sweetener.
- If using protein powder, choose one that blends well and has a flavor you enjoy.
