Ingredients

  • 3 bagels sliced in half
  • 1 tbsp olive oil
  • 1 pound lean ground beef or ground turkey
  • 2 tbsp taco seasoning
  • cup water
  • ½ cup refried beans
  • ½ cup thick salsa
  • cups shredded Mexican-blend or cheddar cheese
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ¼ cup diced red onion
  • ¼ cup sliced black olives
  • Sliced jalapeños optional
  • Sour cream guacamole, or taco sauce for serving

Instructions

  • Preheat the oven to 400°F. Arrange the bagel halves cut-side up on a baking sheet and lightly brush them with olive oil.
  • Toast the bagels for 4 to 5 minutes, just until the surfaces begin to crisp. Remove them from the oven.
  • Cook the ground beef or turkey in a large skillet over medium heat, breaking it into small crumbles as it cooks. Drain any excess grease.
  • Add the taco seasoning and water. Stir and simmer for 2 to 3 minutes, or until the meat is evenly seasoned and the liquid has mostly evaporated.
  • Spread a thin layer of refried beans over each toasted bagel half. Spoon salsa over the beans and divide the seasoned meat evenly among the pizzas.
  • Sprinkle each pizza generously with shredded cheese.
  • Bake for 7 to 10 minutes, or until the cheese is melted and the edges of the bagels are crisp.
  • Let the pizzas cool for about 5 minutes. Top with shredded lettuce, tomatoes, red onion, black olives, jalapeños, sour cream, guacamole, or taco sauce before serving.

Notes

  • Use thick salsa to keep the pizza bases from becoming soggy.
  • Toast the bagels before assembling the pizzas for a crispier crust.
  • Add lettuce, tomatoes, avocado, and sour cream only after baking.
  • Substitute English muffins, mini naan, pita bread, or flatbread for the bagels.
  • Ground turkey, shredded chicken, black beans, or seasoned lentils can replace the ground beef.
  • Nutrition information will vary depending on the base, meat, cheese, and toppings selected.
