Chocolate Bourbon Cupcakes

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 tsp espresso powder optional
  • ½ cup buttermilk
  • ¼ cup sour cream
  • cup bourbon
  • cup hot coffee
  • cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

Chocolate Bourbon Buttercream

  • 1 cup unsalted butter softened
  • 3 cups powdered sugar
  • ½ cup cocoa powder
  • 2 tbsp bourbon
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Optional garnish

  • Chocolate shavings
  • Cocoa powder dusting
  • Mini chocolate chips

Instructions
 

  • Preheat your oven to 350°F. Line a muffin tin with cupcake liners.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, salt, and espresso powder.
  • In another bowl, whisk together the buttermilk, sour cream, bourbon, coffee, oil, egg, and vanilla extract.
  • Slowly add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  • Fill cupcake liners about 2/3 full. Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean.
  • Allow cupcakes to cool completely before frosting.
  • Beat butter until creamy. Add powdered sugar and cocoa powder gradually. Mix in bourbon, heavy cream, vanilla, and salt until smooth and fluffy.
  • Pipe frosting onto cooled cupcakes and garnish with chocolate shavings or mini chocolate chips if desired.
