Apple Cinnamon Flaxseed Muffins

Ingredients
  

  • ¾ cup milled flaxseed
  • ½ cup old-fashioned rolled oats
  • ½ cup whole wheat flour or all-purpose flour
  • 2 tsp baking powder
  • 1 tbsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • ½ cup brown sugar
  • 3 large eggs
  • ¼ cup oil
  • ½ cup unsweetened applesauce
  • ¼ cup milk
  • 1 tbsp vanilla extract
  • 1 medium apple half shredded and half finely diced
  • ½ cup chopped pecans optional

Instructions
 

  • Preheat oven to 350°F. Grease a 12-cup muffin tin well or line with muffin liners.
  • In a large bowl, stir together the milled flaxseed, oats, flour, baking powder, cinnamon, nutmeg, salt, and brown sugar.
  • In a separate bowl, whisk together the eggs, oil, applesauce, milk, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Fold in the shredded apple, diced apple, and pecans if using.
  • Let the batter rest for 10 minutes so the oats and flaxseed can absorb some of the moisture.
  • Divide the batter evenly among the prepared muffin cups.
  • Bake for 16–20 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack.
