Growing up my mom cooked dinner every night after a long day at the office. How she did it is beyond me. When my kids were young my work day didn’t end. Getting the kids to school functions and sports practices is just as much work as crunching numbers at my day job. I had little time to come home and make a meal for the family. This means I often relied on fast food and quick meals. Now that it has calmed down in the house I have the time I need but my kids don’t appreciate a home cooked meal of steak, meatloaf, or casseroles. Not to fear moms are known to adapt and recently we were sent a few boxes of goodies to give a try: Stuffed Chicken Minis from Milford Valley.
Stuffed Chicken Minis
We had the chance to try three new flavors of Stuffed Chicken Minis (found at Publix):
- Stuffed Buffalo Style
- Stuffed Cordon Bleu
- Stuffed Jalapeno
Of course the true test is the “kids” test. So I popped all three flavors into the oven and waited patiently to hear what the verdict was. My daughter, who was asking me to make them, tried all three (and can I say I was surprised she was willing to taste the jalapeno). Her favorite flavor ended up the Stuffed Cordon Bleu. I definitely could have called that one!

My oldest son (who is 21) lives on chicken, so he knows his chicken. He too was willing to be my taste tester. After trying all three his favorite was the Stuffed Buffalo Style. Which again was not a surprise as he loves to order spicy nuggets and chicken sandwiches when he gets the opportunity.

The great thing about the Stuffed Chicken Minis is the ease of making them. Have I mentioned cooking is “not my thing”. Give me a costume to make or a poster to draw any day but when it comes to cooking please send in the chef! The Stuffed Chicken Minis just take some time in the oven and they are ready to eat in just minutes. Don’t just think dinner when you are thinking Stuffed Chicken Minis. Think lunch, think tailgate, think party, think girls get together, and more!
