VELVEETA® and Ro*Tel® were the two key ingredients used to created this yummy recipe. This is a meatloaf with a kick, a little bit of spice to get your taste buds talking. My mother came over this weekend to help me give it a try. She really loved the use of Ro*Tel® in the meatloaf. Perfect for a hearty family meal. Healthy yet delicious the perfect combo.
Ingredients
2 lbs Lean Ground Beef (or your choice of meat)
1 Medium Onion
1 1/2 can (10 oz.) RO*TEL® Diced Tomatoes & Green Chilies, drained
2 1/2 tsp garlic salt
1 tsp pepper
1 tsp salt
2 Eggs
3/4 cup Italian bread crumbs
1/4 cup ketchup
8 oz VELVEETA®, cut into 1/2-inch cubes
Step 1
Chop Onions
Step 2
Fold together all ingredients (except VELVEETA®)
Step 3
Cube VELVEETA® in very small cubes, and fold evenly into meat mixture
Step 3
Bake at 375 for one hour. Broil an additional 5 minutes for a crispy top layer.
Note: The VELVEETA® will cause a good amount of excess liquid that you should drain before serving.
